BOHEMIAN PILSNER 5.9% Our brewers’ favourite… they have been doing the happy dance for a month now!
Based on the classic style of lager first brewed in the town of Pilsen in Bohemia (now Czech Republic), this is an unfiltered, yet clean & balanced beer. A generous malt character imparts a slight sweetness which is balanced by potent hop bitterness, achieved by 3 hefty additions of hop flowers in the boil. A long and cold fermentation period followed when plenty of hop flowers were steeped in the conditioning tanks creating a floral and spicy aroma. Golden in colour with a dense white head, you will be left with the hoporific effect of having the corners of your mouth go up!
On tap and in bottles at the brewery this week and in good beer shops and bars from early next week.

Very Appealing...
Don’t let anyone tell you that just because a beer is refreshingly easy to drink it’s not deceptively difficult to make. Our White Ale is just that! It’s all about balance and when our take on a traditional Belgian wheat beer involves oats, juniper berries, spices, and citrus peel (just to mention a few) things get a little bit interesting. In fact, just getting great citrus peel is challenge enough. The peel we would love is Curacao Orange – it’s grown in the Caribbean and they’ve been importing into Belgium forever. On our little island though, we can’t get stuff in because they want to protect our borders from diseases and pests. We thought we'd try our luck anyway and did order some in once but it got burnt when it arrived at customs! Next time you're watching Border Patrol on TV and there's a White Rabbit brewer running away from the camera you'll know why...
Turns out the only way we could get it was if they cooked it at 70 degrees for 8 hours; we're thinking we’ve lost all the goodness at that point. There was a point where we said “stuff it” and decided to get the cooked peel anyway, just to try, but the suppliers wouldn’t send it to us unless we ordered a tonne! We even looked at dehydrating our own orange but that is serious hard work.
As a result of all that, we've been spending much more time than usual hanging about in orange orchards on our eternal quest to make the best beer possible. Every so often you uncover a diamond in the rough and we reckon we've hit the jackpot with some ‘rough skinned’ Seville peel from Mildura we've just found. Now it's time to get back to the brewery and experiment...

Beervana is coming
They say Nirvana is a state of perfect happiness; an ideal or idyllic place. We’re pretty sure that Beervana beer fest happening in Wellington NZ this weekend is going to be just that. With over 200 beers from over 80 breweries this is New Zealand’s biggest craft beer festival and in its 10th year now, it is sure to be a hit. Fortunately for us, their vision of the perfect world involves White Rabbit Dark Ale so if you happen to be there this weekend make sure take a walk down the dark path and go find us.

Kerbside drinking
Once upon a time there was a little drive through bottle shop in Fortitude Valley in Brisbane... Luckily, someone decided that was all together far too normal and turned it into a little bar but left the giant drive-in arrow on the ground just to confuse you. Walking into Kerbside bar is kind of like taking a trip with Alice down the Rabbit hole, only this one’s filled with decor they’ve picked up off the sidewalk during Brisbane City Council’s Kerbside collection. All together strange and wonderful, we’re very happy they wanted our little beers to be part of their vision of insanity.

Oysters & Stout
This Friday August 5th, we're having our annual winter celebration of Oysters and Stout - that beer match made in heaven...
We're going to officially launch Bigfoot Stout (Surefoot's big brother), have a specially Randied Surefoot (Vanilla Beans and Oak Chips), and good old reliable Surefoot Stout all on tap.
The oysters will be shucked right before your eyes. As you order. Fresh as a daisy.
Hightail, Steam, Coffee IPA & Regular IPA will also be on, together with the usual pizza, wine and softies.
Hope to see you. Bar open from 5pm, Oysters from 6pm.
New Bar
Over the last few weeks we've been renovating. Not just any old renovating, but recycling our old boxes as well. We've stuck them to the new offices upstairs. We reckon it looks way cool.
It's genius design from our mates at Phooey Architects (you might know Peter Ho from such TV shows as The Reonvators).
...and it's pretty funny watching people spill beer down their front as they try to drink while staring up.
New Toys...
We've got some new brewing toys on their way from Canada. In fact a whole new brewhouse is coming. Should be here early Sept. We'd love to show you a photo, but we don't have one. Soon as we can, we promise.
We're totally excited. And can't wait for it to arrive. It'll mean we can make more beer, and more beer = good. It's one of those immutable rules.

IMPERIAL STOUT SERVED FROM CASKS THROUGH THE BEER ENGINE
|
|
IMPERIAL STOUT 8.1%
28th June is Stout day around Melbourne.
At the brewery, we have filled some traditional English style casks with Imperial Stout, dry hopped it in the casks, and will be serving this cask conditioned ale from our beer engine handpump, lightly carbonated yet with a lasting and beautiful white head. On tap at the brewery next week.
We have upped the bitterness level slightly and we have made made lots of the black stuff. The beer is Jet Black and one to be savoured. The mouth feel is silky smooth, the nose has roasted malt and a touch of caramel. A rich deep mocha and coffee flavour, is accentuated with caramel and smoky flavours. Our Willamette and Goldings hops were used in 3 additions to create an ale with a big bitterness and an assertive hop character.
Winner of the gold medal 2010 at the Australian Interenational Beer Awards, silver medals in 2011, 09, 08 and 07 plus 4.5 stars, Winestate magazine winter beer tasting... ”lovely seamless integration of coffee, chocolate, sweet roast malt and treacle aromas. The weather is perfect for our next three seasonals, the sky is dark, the malt is all shades of black and the tunes in the brewhouse are very black. Time to move to the dark side and get into the Blacks
First up, brewed last week, is our "Brewers Choice" India Black Ale. This is a brand new beer for us. You may think, so what, other brewers have made that before. It is exciting for us for two reasons
1. Our brewers, Tim and Simon, have been brewing our range using our RHB recipes for 3years now, their job is to make every brew, every week, for each style, the same as possible. It can get boring. So to brighten up their day, we asked them to brew one that they choose, their recipe, whatever they think. This is what they think. They trialled it for numerous batches on their homebrew systems and we've all had fun trying them. Now they get to see what you think.
2. It is uncharacteristically out of style for us, and for those of you who know us well, we are all about brewing to style. So it's pretty different for us, even if others have nailed it before us.
Despite the yeast getting held up in customs and a scheduled two day power outage, eventually we are brewing our Gold Medal winning Imperial Stout. Waiting, waiting, waiting.
Then it's time for Weizenbock, our tall, kinda strange, dark German. He has his fans every year, and we are looking forward to getting stuck into brewing this one too.
WHERE CAN I TRY ALL THESE BREWS?

Belgian Strength
It's no secret we like almost all things Belgian, so when we discovered we were about to have a Belgian strongman come through the giant doors of the brewery we waited with baited breathe. He comes to us from a tiny town called Herk-de-Stad with a population of only 12,000, weighs over a hundred kilos and promises to crush everything in his sight. So what was he doing in our midst? Okay, so less of a strongman and more of a really strong hammer mill that will take on the challenge of unmalted wheat, but that's more than enough to get us beer geeks excited.
See, we don't really like being told we can't do something so if it takes a Belgian hammer mill to crush our raw wheat then that's what we'll do. Throw this in the mix with roughly equal portions of malted wheat, pilsner malt and just a little bit of rolled oats (who said beer wasn't a breakfast food?) and you've got the grist for our White Ale. Then you know the drill, it's off to the mashtun, the kettle, through the hop back, a few special ingredients thrown in along the way for good luck and into our second Belgian inspired contingent in the brewery, our open fermenters.
What's next in our story of Belgian obsession? Well we might just have to start learning Flemish before we can find out...
Crossing the border
Those of you with a keen eye or a South Australian passport may have noticed White Rabbit popping up in a few places around Adelaide. We are now flowing freely on tap at The Wellington Hotel and at the Earl of Leicester so if you find yourself in the city of churches head down for a pint. Keep your eyes open and you never know where we might appear...
Hopping around Melbourne
We'll be taking some time away from the valley in the next few weeks to bring our latest batches of beer to those of you in Melbourne. Look out for us at the Melbourne Food and Wine Festival Cellar Door this weekend and at the Victorian Microbrewers showcase at Federation square on March 16th to 17th. We'll be packing our van 'Lucky' with plenty of beer for tastings so head on down for a tipple if you're in the city.
Of course, we'll make sure there's enough of us still out here to fling the great doors open everyday for those of you who come visit us at the brewery.
Cheers from all of us, or as they say in Flemish... Proost!

MAIBOCK 6.8% A COLABORATION BETWEEN RED HILL AND HARGREAVES HILLS
Great Australian Beer SpecTAPular
The Local Taphouse asked breweries in Australia to create a special beer for the GABS event, to be held on Sat 12th Feb. Dave (Red Hill) and Simon (Hargreaves Hills) put their heads together and over a few beers decided to do a collaborative brew for the event.
We were looking to brew something not brewed or tasted fresh in Australia before, something traditional, European and an elegant beer. We decided to create a Maibock. After we worked out a recipe we kicked the other brewers out the brewery at Hargreaves Hills. Beer was brewed by Dave and Simon at Hargreaves Brewery with a healthy amount of beer sampling, arguing and “your doing it like that?”.
The Maibock has been filtered, dry hopped, and tasting spectacular, it'll be available at the Taphouse on Feb 12th, and from the 17th Feb at Red Hill Brewery and Hargreaves Hill (Yarra Glen)
WANT A FREE MIXED CASE OF OUR BEER?
Want a mixed case of Red Hill and Hargreaves Hill Beer? Design us a beer label for the Two Hills Maibock, go crazy with your imagination and come up with a label design. The best one chosen by Dave and Simon over a few pints of Maibock will win the prize. Remember Maibock is a German bier, classic style 6.8% and Brewed by Red Hill and Hargreaves Hill. The name of the brewers is Two Hills, the name of the beer is Maibock. You have to send us the image file in a size that could fit on a bar tap, and we will use it on our taps whilst the beer is being served. Entries close 16th February.

Local Taphouse SpecTAPular (GABS)
Each quarter the guys down at the Local Taphouses (St Kilda & Darlinghurst) put on a special turn. The next one is this Saturday (12th Feb) and is to be known as the Great Australian Beer SpecTAPular. The theme for this one is specially brewed, one-off beers from breweries all around Australia.
Looking down the list, there have been some doozies of beers made. There are collaboration brews, fruit beers, and an ANZAC biscuit-inspired beer (Whu?). The envelope is creaking at the seams…
We came up with 'Cucumber Sandwich', a summer ale infused with (you guessed it) Cucumber and a bunch of fresh, zingy New Zealand hops. Perfect for a hot February day.
Gold coin donation at the door goes to raise funds for those struggling with the apocalyptic weather this country has been enduring these last few weeks.
Check the list of beers, and learn more here. We’ll see you there.
The Ladies of Beer.
On Mar 4th, the World Famous Beer Diva, Kirrily Waldhorn, presents the Victorian Women of Beer. This would be an event to go to anyway, but the added bonus for us is that our own Head Brewer, Jayne Lewis will be part of the show. She’ll be talking beer, busting myths and maybe banging out a couple of tunes on her ukele (not confirmed). Ladies from Red Hill Brewery, Bridge Rd Brewers and True South will also be there.
It’ll go down at the Thornbury Theatre and you should look here to learn more, and book tix.
Young & Jackson's Beer Dinner, Feb 15th.
That venerable establishment of beer and general good times, Young & Jackson’s Hotel, is hosting us at a Beer Dinner on Tues Feb 15th. 5 courses, 5 beers and beer chit-chat in between from our own Executive Brewer, Dave. He’ll be there to answer all your questions. On anything.
The menu includes Steam Ale with Prawns, Skipping Girl with Mussels, IPA and BBQ'd Kangaroo, a Hightail Ale Pie, and Double Hightail matched with Cheese. Mmmmmm.
Phone the pub on 9650 3884 for more info, and to book tix.

What's so wacky about introducing a lager in summer you say? Well, you've never tasted a lager quite like this one! Not content with an "oh so smooth, crisp and boring" lager like the multitude of others in the market, the Mad Brewers set off in a brain thumping pursuit of the quintessential Australian summer characters, and then combined them to create our latest offering, Scribbly Gum Lager - a beer with a name to match its uniquely Australian flavours!
We would like to invite you to join us at The Portland Hotel, Melbourne for the official launch of the 2011 Mad Brewers Scribbly Gum Lager. Come along and meet Craft Beer Specialist Roy Lever from 6.30pm - 7.30pm on Wednesday 2nd February to sample this limited release matched with some canapés.

I'm dreaming of a White Ale Christmas
It seems while we were busy jumping from tank to tank in the brewery, and distracted by the disarray that comes with relocating the packing line, the end of the year somehow snuck up on us and Christmas is hiding behind a tree just around the corner. Luckily, we've put a case of White Ale under the tree too to keep it company until we get there.
A big merry Christmas to all of you!
Doing it like rabbits
It is true what they say about rabbits and White Rabbit is no exception. We just can't get enough of you. Summer is upon us, it's time to play and we want to play all the time. If fact, we're doing it daily.
We'll be sliding open the brewery doors 7 days a week 11am to 5pm from December 11th all throughout the summer season. Join us tucked away in the hills amidst the daily flurry of brewery buzz for a tasting, a beer and a laugh. It is the silly season after all...
Visit www.whiterabbitbeer.com.au to find out how to get up here. We'll be ready with your freshly poured beer, bubbles gently rising to the surface, beads of condensation dripping from the side of the glass, just waiting for you to walk in.
A Twilight Tipple
What better way to bring in the start of a new year than with a white rabbit beer in hand, a film on the big screen and the green open plains surrounding you? Seems like Regional Twilight Movies have taken care of all the details for us so we don't have to worry about hiring that expensive projector after all. Perfect we say. "When?" You say? Why, you could visit www.twilightmovies.com.au but we'll tell you anyway...
Echuca Jan 5 to 7 Bendigo Jan 15 Ballarat Jan 19 to 21 Horsham Feb 4 to 5 Shepparton Feb 25
We have 10 double passes to each screening to give away so if you live in the area or are craving a cruise on the old dusty trail simply email

your name, postal address and preferred location and we'll post off some tickets to you so you can hop along for the evening. Isn't it time you visited that long lost Auntie in the hills?
Until next time, wishing you a very hoppy new year from all of us here at White Rabbit...

December 2010, Special Christmas Edition
What is a Rare Breed?
Lately we've been busy playing with our new bottling line, cranking out longnecks.
We bought the thing especially and we're calling the longnecks 'Rare Breeds' because they won't be everywhere, and they'll run out. This makes no sense to our accountant but we think that's a good reason to do it. He's used to being ignored anyway.
We'll do different beers seasonally. Like an IPA in summer, Stout in winter etc, other stuff when we think of it.
Which segues nicely into:
Rare Breed IPA is out now!
It's rich, malty and hoppy. Don’t take our word for it see here for what our mate Crafty Pint thinks of it. It’s 6.2% alc/vol and full of the Christmas spirit. Get it at discerning bottleshops, and of course, right here at Goat HQ.
But only while it lasts.
Meredith Music Festival
They say that being a sailor, and owning a boat is like standing in your raincoat, under the shower, tearing up $100 bills. That sorta reminds me of a few Merediths of late. But we wouldn’t miss it for the world. And we’ll be there again this year.
Being a BYO, but no glass event, quite a few Goat kegs make it into the Supernatural Amphitheatre. Why wouldn’t you bring one? A keg establishes your place (and importance) in the Sup, new exotic people can be won over by sharing a pot or two. And the beer! So fresh!
But note, if you’re going, and thinking of taking a keg, and pouring it through a regular temprite/magic box, you won’t get in with a gas bottle, leaving you with an impregnable 50litres of beer. The very definition of frustration.
The way around this is to get one of these things: a party pump. You can get ‘em at our friends Grain and Grape.
And remember to always keg responsibly.
What's On At HQ
We always thought that Melbourne had only three seasons; football, cricket and asparagus, but it turns out there's a fourth; IPA.
So in honour of IPA season we've got two on tap at the Goat Bar: Our Rye IPA and regular IPA. We also have a new English Style Summer Ale (Goldilocks) and ol’ faithfuls Hightail and Steam.
More here on all the beers. Including why Randy thinks he lives in Queensland at the moment. Pineapple and mint! Who thought of that!
Oh, and we'll be open Christmas Eve. A merry and safe Christmas to all...
Love,
Goats.

Hawthorn, Melb. Mon 18 October 2010:
The Flavour Merchants

Nail Brewing Clout Stout - Imperial Russian Stout Country: Australia - WA
Western Australia’s Nail Brewing has just released a limited edition version of it’s award-winning Clout Stout, a 10.6% Imperial Stout that the brewer describes as brewed for the beer connoisseur.
A super charged Nail Stout, brewed with extra everything. Six different malts (including pale, oatmeal, crystal, black, chocolate and roasted barley) fill the mash tun twice over resulting in a single kettle boil. Clout Stout uses six times more malt than Nail Stout.
Clout Stout is a Russian Imperial Stout brewed for the beer connoisseur with the patience to age his/her beer. Poured from the bottle it is black and thick, initially sweet and full bodied before developing into a smooth, bittersweet finish. 10.6% ABV gives Clout Stout huge complexity and depth - each sip warms and hypnotizes the drinker.
Serving Clout Stout:
Best served at cool cellar temperature (12C) or refrigerated then allowed to warm for 20-30 minutes before pouring. Serve in your best stemmed glassware, such as a Belgian chalice or an oversized wine glass. Pour without tilting glass to produce a modest head. Sip and savour with 2 or 3 close f1200

Double Hightail In Bottle
We've just packaged 232 cases of Double Hightail in 650 ml longnecks. What's it like? It's like Hightail but with more. More malt, more hops - more Hightail (7.2%). Where is it? A bunch of good Melb beer stores have it right now eg Purvis, Mc Coppins, Church St Cellars, Blackhearts and Sparrows, Carwyn Cellars, Swords, Slow Beer, Acland Cellars. We are sending a handful of cases to most cap cities but it will take a week or so to get there. Just call if you'd like more info.
Bottling Line
We're installing a brand spanking new bottling line in here this week. Fresh off the boat from the US this pup will enable us to crank Goat out that will stay fresher longer. First trial bottling session tomorrow arvo. Psyched.
Special Goats On In The Bar
We have some good one-off batches on tap in the brewery at the moment. Fancy Pants, Two Champs Kolsch, Dopplebock, Double IPA and Surefoot thru coffee beans in Randy (that's a pic there illustrating the blackness!) Then there's always Steam and Hightail of course. Bar open from 5pm Wed and Fri nights, free brewery tours each Wed at 6:30pm. Drop in for a pizza and goat.
Cheers, Cam and Dave.

Hawthorn Amber Ale is a rich malt flavoured ale, presenting itself as dark auburn coloured with hints of red. More British than the Queen's corgi's, our Amber Ale is meticulously brewed to the true Northern English style.
The inclusion of the world famous base malt – Maris Otter, ensures a lovely rounded body, whilst a small addition of Chocolate Malt in the grain bill delivers a warm bittersweet roasted caramel flavour.
Mild English hops balance the sweet malt nicely, and plenty of dry hopping after the fermentation infuses a floral and spice aroma.
Hawthorn Amber Ale is an all malt beer with no added sugar, chemicals or preservatives. Smooth and well balanced, drink it a few degrees warmer than the fridge for the full flavoured experience. Best from a glass.
Perfect with char grilled meat, or equally enjoyable on its own.

Hop Harvest!! That's right it's that time of the year already, Hop Harvest. Bridge Road Brewers are happy to report that the local hop garden, Rostrevor, had a great year, with plenty of rain and a decent harvest. Our Harvest of about 4 or 5 hop plants from Rostrevor is miniscule in comparison to the hundreds of acres grown in the Ovens Valley. But as a wise man once said; you can only brew with the hops you've got! So brew we did, 1800l of the Harvest this year, the same volume as 09 - which was quickly consumed.
The Harvest
The main theme of the current Posse Pack 'The Harvest' is based loosly on our Australian Ale, bolstered with loads of fresh hops. This beer is made using green 'wet' hops that were picked on brew day. This differs from typical hop additions in most beer which use dried hops. Hops have a very short shelf life when fresh and therefore 99.9% of all hops are dried. The reult is a refreshingly hopped beer, with great aroma, a touch of bitterness and a 'green' hop character on the finish. The hop variety itself has never been used in a commercial beer by anyone but Bridge Road, it is a development stage in Rostrevor's research garden. We hope you enjoy this years Harvest.

INTRODUCING JULIAN
A self confessed ‘home-brewer devotee’ Julian has joined the team at Holgates as our Business Development Manager. Hailing from England and immigrating to Australia 19 years ago, Julian’s background is packed with impressive positions at renowned restaurants and clubs in and around Melbourne. The three things he has missed from England are; the Historical Architecture, the Pubs and the Beer. That is, of course, until he found Holgate’s! Feeling right at home, Julian has settled into concentrating on ‘World Domination’ of the Holgate brand.
