Edith Cowan University is running a Short Course in Brewing between 25 – 29 June at its Joondalup Campus.
The course has been designed for brewers wishing to prepare for the IBD General Certificate Examinations, professional brewers wishing to refresh or extend their knowledge of brewing science and processes or those considering entering the brewing industry.
Course Content: The ECU Brewing Short Course covers the entire brewing process. Topics covered include:
- Raw materials
- Brewhouse operations and wort production
- Yeast management and fermentation
- Finishing operations and beer quality
All course materials are provided, along with daily morning and afternoon tea, lunch and refreshments. Lectures and practical exercises will be presented by ECU brewing science lecturer and IBD accredited trainer, Hugh Dunn.

My next themed beer night as “That Beer Bloke” is “Beer in Style”, which I will be hosting at the ALH Castle Hill Tavern, on Thursday May 3rd, commencing 7pm for a 7.30 sharp kick off. The event will be an Australian Craft Beer Show case.

HOP HARVEST ALE 6.0%
This years Hop Harvest Ale used hops that were about 24hrs old, we picked, and racked them in our drying shed. the next day we threw in lashings of Goldings and Willamette to create a stunning hop character. The ale went into casks, was dry hopped in them, and we are getting the 5th tap out of hibernation this week.
Hop Harvest Ale is the perfect Autumn beer, and we are serving it through our hand pump or beer engine in the traditional English style which pulls the beer from dry hopped casks and is poured through a sparkler tap creating a thick creamy head; it also removes much of the natural carbonation from the body of the beer, and drives the hop bitterness into the head of the pint. The mouthfeel and flavour of a beer like Hop Harvest Ale poured through a beer engine has to be experienced to be believed (Thanks Crafty Pint for the snap of our engine at work)
The beer is available at the brewery on tap from Thursday 29th, in bottles from early April and at all our regular venues by the Friday 13th April.

Some of you might have already heard about the Great Australasian Beer SpecTAPular (GABS). Sixty Australian and New Zealand brewers have accepted an invitation to brew an original and unique beer which will be showcased with food from leading Melbourne restaurants. The event will be taking place over three days and five, 4½ hour sessions in Melbourne between 11 and 13 May, 2012.
GABS is looking for volunteers to be involved in the festival. There will be a range of roles that include:
- Front desk and customer service; greeting festival attendees
- Beer service; pouring beer and serving attendees
- Bar support; helping keep the beer flowing and the bars working well.
In return for volunteering, each GABS volunteer can attend a free session and will receive a festival glass, beer and food tokens. All volunteers will also receive an exclusive GABS volunteer t-shirt and food vouchers for their volunteer session.

SABMiller plc, one of the world's leading brewers, announced on January, 16 that China Resources Snow Breweries Limited ("CR Snow"), its joint venture with China Resources Enterprise Limited ("CRE"), is launching a trial of SABMiller's international premium brand, Miller Genuine Draft, in the Zhejiang region of China. The introduction of Miller Genuine Draft into the Zhejiang market gives the company the opportunity to test the potential for its international brand with a premium beer imported from the USA. The joint venture has achieved significant growth for local brand ‘Snow', which is both the largest beer brand in China and in the world by volume. CR Snow had a 21% share of the Chinese beer market with sales of more than 92 million hectolitres in 2010. CR Snow is the exclusive importer and will utilise its existing infrastructure to service the market, with Miller Genuine Draft initially available in Hangzhou and Wenzhou following a launch event to be held in Hangzhou on 16th January. DB Breweries will raise its beer prices in March, and other liquor companies in New Zealand are not ruling out similar moves, Stuff.co.nz reported on January, 17. DB, with core brands Heineken, DB Export, Tui, Monteith's, DB Draught, Tiger and Amstel, announced this week that its pack products (beer and cider) will rise 3 per cent on average. Its tap products will go up 1 per cent while its ready-to-drink labels (RTDs) will rise by 4 per cent on average from March 5. The increases were a direct result of escalating costs, from raw materials and production to packaging and distribution, DB said. ''DB is experiencing increasing material costs as well as significant pressure on fuel, energy and utility costs, all of which have impacted our overall production, packaging and distribution expenses,'' managing director Brian Blake said. ''It's certainly regrettable that these rising costs have to be passed on to customers but unfortunately it's unavoidable.'' He acknowledged it was a difficult time for many operators in the hospitality industry but said the company was continuing to invest in marketing campaigns and category development to drive sales of DB's brands and their business overall. Mexico & Ireland: Corona Light beer to be launched in Ireland later this month
|

Grupo Modelo has lined up the Irish launch of its Corona Light beer variant, local media reported this week. Barry & Fitzwilliam, which handles the Corona stable in Ireland, has confirmed that Corona Light will join Corona Extra in the country from later this month. The move marks the first time the variant will be available outside Mexico and the US, Barry & Fitzwiliam said. “Our aspiration for Corona Light is to have a 10% market share in year one”, said Barry & Fitzwilliam's (B&F) MD, Michael Barry. The light beer market in Ireland equates to around 50 mln bottles per year, according to the company. In line with the increase in bottle size for Corona Extra in Ireland last year, Corona Light will also be available in a 35.5cl bottle, “ensuring at least 7.5% extra for the consumer vis-a-vis competing brands”, the firm added. Corona Light contains around 99 calories, 30% less than regular bottled beer, B&F added.

For Western Canadian barley growers, achieving marketing choice is only the first step. The next is creating a robust marketing system, Brian Otto, president of the Western Barley Growers Association (WBGA), was quoted as saying by CNW on January, 17. "With recent changes to the Canadian Wheat Board providing a 'catalyst for change' in barley marketing, the WBGA is exploring options and opportunities to re-focus and re-invigorate Western Canada's barley industry," Otto says. Through its "In Search of the Optimal Marketing Structure" study, the WBGA has consulted with nearly 80 people (including a number in China and Japan) in all sectors of barley's domestic and export supply chains. The study is gathering information to put forward recommendations for the best commercial model for Western Canada's newly deregulated barley market place. "We're seeing clear indications that a number of new opportunities for Canadian barley will emerge," says study co-author Russ Crawford of Agrinomics I. T. Consulting in Calgary. Application of the Rapid Visco Analyser as a Rheological Tool for the Characterisation of Mash Viscosity as Affected by the Level of Barley Adjunct

Brew. 111(2), 165–175, 2005 ABSTRACT The application of the Rapid Visco Analyser (RVA) as a laboratory scale rheological tool for the characterisation of mash viscosity is the subject of this study. Studies were conducted to simulate an industrial mashing process, taking into account temperature /time, grist loads, adjunct amounts and enzyme levels. The RVA was used to characterise the effects of different ratios of malt: barley adjunct. The method was found to have the ability of not only detecting the major viscosity changes which occur during starch gelatinisation/liquefaction processes, but also the minor viscosity changes which were found to occur during the proteolytic and saccharification steps. Clear correlations were found between the level of barley adjunct and the output rheological data points of the peak viscosity at 50oC (PV50, R2 = 0.9931), the rate of viscosity breakdown at 50oC (BR50, R2 = 0.9522), the peak viscosity prior to gelatinisation (PVG, R2 = 0.9988), the area recorded under the gelatinisation curve (PGA, R2 = 0.9928) and the peak viscosity breakdown rate (VBR, R2 = 0.9783). The developed RVA rheological method is a useful tool for characterising grain quality (adjunct level) with regard to macromolecular viscosity compounds and the grains endogenous enzymatic capabilities. Czechs, whose historical preferences for Pilsner-style lager once sparked efforts to make it a protected trademark like Champagne, are turning to brews including ales and stouts, some flavored with banana or nettle. Market leaders SABMiller, Heineken NV and StarBev, owner of Prague-based Staropramen, are responding with new products to keep market share, Bloomberg reported on January, 4. Though Czechs remain the heartiest beer drinkers in the world, breweries are giving them more choice to protect the industry at a time of lower demand and changing lifestyles. “We launched Staropramen Lemon and also an unfiltered version of our lager in summer and we’re very happy with the performances,” StarBev Chief Executive Officer Alain Beyens said. “The lemon one especially helped us to grow our market share in a falling market.” The three largest breweries in the Czech Republic, SABMiller’s Plzensky Prazdroj AS, Pivovary Staropramen AS and Heineken CR, produced together about 72 percent of the country’s total beer output of 17.7 million hectolitres in 2010, including beer for export. Heineken has once again taken over the UK distribution and marketing rights for Tequila-flavoured beer brand Desperados, The Drinks Business reported on January, 4. The company is reprising its sales role having delegated it to SHS Sales & Marketing in 2009. Both companies have agreed that it is now the right time to simplify the beer’s route to market. Heineken will take over full responsibility on 1 February and integrate the beer into its premium and speciality brands portfolio. Bruce Reinders, brand director of premium lagers for Heineken UK, said: “We are delighted to have reached this agreement with SHS Sales & Marketing. “Desperados is a Heineken-owned brand that is currently enjoying success in many European markets and it will make a distinctive and exciting addition to our portfolio of premium packaged lagers.” In return, Heineken has handed SHS control over the sales and marketing of Czech brand Krusovice, as well as the distribution of Sagres, Heineken’s Portuguese import. Belgium: AB InBev denies price increase collusion with Heineken’s Alken Maes

AB InBev has denied that it colluded with Heineken's Alken Maes subsidiary over a beer price rise in its native Belgium, local media reported this week. The country's finance minister has reportedly asked competition authorities to investigate the two brewers' decision to raise their beer prices by around 6% in March. However, a spokesperson for AB InBev dismissed suggestions that there has been any collusion. "Information about pricing or cost structure is competitively sensitive and therefore never shared or discussed with competitors," the spokesperson said in a statement issued on January, 3. "Should the Belgian Competition Counsel wish to look into the matter, it goes without saying that InBev Belgium would fully cooperate." From 1 March, AB InBev will increase prices for beer crates and cans sold in the Belgian off-trade by 5.9%, to cover higher costs. Alken Maes plans to raise beer prices in the country by 6% on 12 March.

World’s No. 2 brewer SABMiller has decided to launch Belgian specialty beer St Stefanus in France, Rayon-Boissons.com reported on January, 5. The unpasteurised abbey beer is produced by Van Steenberge brewery, with which SABMiller signed a distribution deal last year, and is distributed in Belgium under the name of d’Augustijn. In France, the beer will be available in 33 cl and 75 cl bottles. SABMiller already launched St Stefanus in the United Kingdom at the end of last year.

Malawi: Carlsberg Malawi announces surprise price hike
|

Carlsberg Malawi announced earlier this week price adjustments on all its clear beers, minerals, squashes and spirits with immediate effect, Nyasa Times reported. For instance, the new official retail price for the popular Carlsberg Green (340ml) is now K150 while Carlsberg Special and Stout are both going at K170 with Kuche Kuche fetching K140. The 630ml bottle of Carlsberg Green has been put at K250 though for the last six months it has not been on market. According to a press release placed in Sunday papers, Carlsberg Malawi indicated that the price adjustments were with effect from 1st January 2012 and the company attributes the increase to the rising production and input costs. “Carlsberg Malawi would like to inform all its valuable customers and consumers that it has adjusted its prices on clear beers and minerals with effect from 1st January, 2012,” reads the press release in part. But most consumers were not aware of the increase and argued with bar tenders upon wanting to settle their bills that were on the higher side. Growing global demand for malting barley and a predicted UK shortage of pulses mean there are good opportunities to profit from both crops in 2012, Farmers Weekly reported on January, 5. In spite of the troubles in Europe, elsewhere, the world beer market is growing, the world barley area is declining and the UK is now seen as one of the most reliable sources of malting barley, according to Stuart Shand of Gleadell Agriculture, who points out that there’s only just enough malting barley in the world to meet demand. “Even though beer sales are down in Western Europe, globally they continue to rise about 2.5% per year,” he noted. “This positive beer consumption, together with tight world stocks, means that there are currently big premiums on offer for malting barley.” Currently, the UK malting barley crop is worth a premium of EUR30/t (£26), he said. However, the growing dominance of the top brewers in the world means that variety choice is an important consideration for any grower, Mr. Shand said. “The top four brewers now account for over half of the world market. NYSE Liffe, the derivatives arm of NYSE Euronext, picked malting barley varieties Sebastian and Syngenta AG’s Quench as eligible for delivery against futures contracts for the 2013-14 crop year, Bloomberg reported on January, 5. The varieties picked by an expert committee are unchanged from those for the 2011-12 and 2012-13 harvest seasons, Lionel Porte, commodity-product manager at NYSE Liffe, said. For 2010-11, the eligible varieties were Sebastian and Syngenta’s Tipple. Sebastian is a spring-barley variety grown across Europe and Quench is a spring malting-barley variety developed by Basel, Switzerland-based Syngenta.

Use of PCR-DHPLC (Polymerase Chain Reaction–Denaturing High Performance Liquid Chromatography) for the Rapid Differentiation of Industrial Saccharomyces pastorianus and Saccharomyces cerevisiae Strains

Brew. 116(4), 464–474, 2010 ABSTRACT Strain specific detection and control of Saccharomyces pastorianus and Saccharomyces cerevisiae starter cultures is of great importance for the fermentation industry. The preconditions of strain specific fermentation characteristics can be ensured by periodic analysis and confirmation of the strain identity. With regard to industrial S. pastorianus and S. cerevisiae strains and a focus on brewing strains, the differentiation methods most available are time-consuming and not very discriminative. In this work PCR-DHPLC analysis was investigated as a novel approach for the differentiation of industrially used S. pastorianus and S. cerevisiae strains. The PCR-DHPLC-system was specific for S. cerevisiae strains and S. pastorianus hybrid strains that contain IGS2 rDNA, which originates from the S. cerevisiae ancestor. For the DNA of 177 strains of 41 non-target species, which are typical for beverage and fermentation surroundings, the absence of PCR-amplificates could be confirmed by DHPLC analysis. It was shown that single strains of S. cerevisiae and S. pastorianus could be differentiated. A strain specific differentiation within the group of top-fermenting Saccharomyces cerevisiae strains could also be performed. For the group of bottom fermenting S. pastorianus brewing strains, strain-to-strain specific differences in the DHPLC chromatograms could be observed which can be used to differentiate and to compare two single strains with each other, although the comparison of chromatograms of an unknown S. pastorianus strain with a set of known S. pastorianus chromatograms could only reveal tendencies towards grouping into types. The differential DHPLC chromatogram characteristics (fluorescence intensities, number of peaks/side-peaks/peak-shoulders) within S. pastorianus are present, but not as distinctive as for S. cerevisiae. Additionally PCR-DHPLC has advantages compared to other differentiation methods, such as species specificity, speed (2.5 h for one sample) and precision with the described limits. Based on the classic style of lager first brewed in the town of Pilsen in Bohemia (now Czech Republic), this is an unfiltered, yet clean & balanced beer. A generous malt character imparts a slight sweetness which is balanced by potent hop bitterness, achieved by 3 hefty additions of hop flowers in the boil. A long and cold fermentation period followed when plenty of hop flowers were steeped in the conditioning tanks creating a floral and spicy aroma. The Beer & Brewer Awards will be formally announced at a presentation dinner at The Sebel Hotel, Surry Hills, NSW, on 25 October 2011 from 6 pm. All are welcome. A Trade Show will be held during the day, from 12 to 4 pm, showcasing brewing equipment, packaging, ingredients, beers and ciders for breweries and distributors looking to network with the retail trade. Entry to the Trade Show is free.
